Food Porn

I often post my food pictures on the Lo-Carb Fat Camp Group Page, but realized that this might be a good place to put the pictures together.  These pictures don't have recipes attached, but I will give general directions (most of them are the result of lo-carbing my own recipes).


Sliders, with broccoli/cauliflower salad (07/31/12)
Use small Oopsies for the slider buns; make your regular recipe for pasta salad, but sub broccoli/cauliflower mix for the pasta.







Chuy's Panchos (12/31/11)
Order the Panchos from the menu, no chips & no beans.  I went over the ingredients/amounts with the manager.  This entire plate is 7.2 net carbs.



Applebees's Steak with Double Broccoli (01/21/12)
I usually go to Applebees when I am going out with someone--my son, my daughter, or a friend.  We order the 2 for $20 and I order the steak.  I ask them to sub broccoli for the potatoes.  It's never been a problem for them to make the substitution.  I will admit, that when I go with my daughter, we sometimes order one steak with baked potato and one with double broccoli.  We split the baked potato and the broccoli,  Neither one of us wants a whole potato in one sitting.  Of course, this is when I'm on Maintenance--not on Induction or OWL.
















BLT Wrap (11/24/2011)
Make your BLT; but, use lettuce instead of bread.  This was very good.  I've made it many times since.  You can use Romaine lettuce or Boston lettuce.  This was Romaine, but I use Boston whenever possible.




Macaroni & Cheese (03/02/2012)
This is a family favorite.  The only thing I had to do to low-carb it was omit the flour (used to thicken the sauce).  I use guar gum or xantham gum now.  It tastes the same.  I like to add a little finely chopped onion to the butter before I add the cream.  The onion reminds me of my mom's home-made macaroni & cheese.  In our house, no holiday dinner is complete without a HUGE pan of cauliflower and cheese. 



Chile con Queso & Guacamole (04/27/2011)
At any Mexican food restaurant, you can order low-carb.  I eat the appetizer with my family, but I substitute lettuce for the chips.  Sometimes, this is enough to satisfy my hunger.  If it's not, I order nachos (no beans or chips), taco salad (no shell), or fajitas (no tortillas).
