Meaty Spinach Casserole

Makes 5 1-cup servings with 3 nC each

I called this a casserole, but it really is a stove-top meal. I've had a very busy day today--getting ready for my daughter's garage sale.  We've been cleaning out closets, sorting, pricing, measuring, & packaging (fabric and small items) for 11 hours--with a short break for lunch.  This was dinner--tossed together from stuff in the refrigerator and freezer.

Ingredients:
2 TBS oil--coconut oil or olive oil
1 lb ground meat--you can use any meat, I used ground chicken
1 onion, chopped
1 package frozen spinach, thawed
1/2 cup heavy cream
1/4 cup shredded Parmesan (fresh, not powder)
1 cup shredded cheddar

Directions:
Heat the oil and begin browning the chopped onion.  Add the ground meat--make sure that you break it into small pieces for even cooking.
When the meat is cooked through, top it with the spinach (it may still be partially frozen.  At this point, leave the lid off the skillet so that the moisture will begin to evaporate.
Once the spinach is warm, stir it into the meat.  Make sure you mix well.
Add the 1/2 cup of heavy cream and the 1/4 cup shredded Parmesan.  Stir well and let heat for about 2 minutes.
Stir again and even out the mixture in the skillet.  Top with half of the shredded cheddar.

Serving:
Divide into 5 1-cup servings and top each with a portion of the reserved cheddar.
